Hello, and thank you for visiting my Umami Dish, AKA Savory Dish website. My name is Lilia Lord. I am a Food Blogger, Registered Dietitian, and a schooled chef. I say school because I did not work in the restaurant industry. Instead, I chose to be a practicing dietitian. I worked in different food industry sectors, i.e., acute and long-term hospitals, government-funded research for AEC and NIH, public health, and private practice.

My blog brings you decades of learned and acquired cooking experience and a vast knowledge of food and nutrition.

Culinary Skill Development

Becoming a good cook is not just about following a recipe blindly. I have written hundreds of menus and thousands of recipes for the hospitality industry. During my site visit to the kitchens I am witness to the fact that the interpretation of the standardized recipes that I wrote and is supposedly being followed differs widely from each cook in another facility. The taste is somewhat there but the interpretation of the processes is varied.

The recipe itself cannot produce a good product. The person following the recipe must know how to interpret it and must have the skills and knowledge in handling the ingredients listed in the recipe.

In order for a recipe to arrive at the correct appearance and taste, the cook following the recipe must be familiar with the taste and appearance of the dish that he or she is preparing. One can not be a good cook overnight. Learning and experience comes hand in hand.

To become a good cook one has to gain knowledge of foods and how it behaves and to develop skills to manipulate it. There are a list of foods, herbs and spicies, ingredients, cuisines, cuts of meat and cooking processes that one has to learn. Lastly, you need to have an educated palate.
