Shrimp Ceviche
The original ceviche recipe usually calls for raw seafood or fish. Mackerel in its raw state is the original ingredients in ceviche and other fresh fishes but unsure how fresh the fish is when sold in the market nowadays.
Due to the recent news regarding the prescense of worms in fish and seafood, I decided to cook the shrimp ,and then marinate it in pure lime juice to further cook it and banish the worms if any.
This dish is truly yummy and is great with tortilla chips as a vessel for eating it.
Ingredients
1 lb frozen extra large shrimp w/ tail on
1 whole cucumber, unpeeled, remove seed if any,sliced across using a slicer or mandoline
1 large shallot , cut in half lengthwise then slice in thin strips
½ C mint leaves
10 fresh lime squeeze juice using zester
2 serrano chili,remove seed and stem,slice in strips
1 tsp salt
1tsp pepper
1tsp sugar
How to prepare
Put frozen thawed shrimp in a small pot. Bring to a boil . Simmer for 1 minute.Remove from heat. Drain well. Put bowl of shrimp on top of cracked ice to chill. When chilled, add lime juice,salt,pepper and sugar and marinate for 1 hour in refrigerator
Prepare all the ingredients according to instruction.
After 1 hour, add the remaining ingredients to the shrimp , Blend and enjoy.
Correct seasoning.Add more salt or pepper as needed.
Serves 4 as appetizer
