Fried Green Tomatoes
If you have not eaten a fried green tomato, you are missing out. Fried green tomato is a favorite southern food and usually served with Remoulade sauce. When you bite into a fried green tomato, It gives you that crunchy, juicy bite, like biting into a crunchy Washington or macintosh apple. So delightful! The flavor is enhanced when paired with remoulade sauce. This dish is definitely savory. Tomato fruit contains free glutamate. Fall is the best time to harvest before the tomato vine dies.
Ingredients
4 large heirloom green tomatoes, remove stem wash and slice in 1/2 -3/4 “ thick
2 tsp salt
2 tsp pepper
2tsp granulated garlic
2 tbsp paprika
2 C AP flour
1/4C bread crumbs
2 eggs(slightly beaten)
Oil for frying
How to prepare
- Wash tomatoes. Remove stem. Slice 1/2 -3/4 “ thick .Yields about 3-4 per sliced tomato.
- Combine flour, breadcrumbs, salt,pepper, garlic and paprika in a bowl.
- In a medium bowl break the egg and beat slightly. Set aside.
- Put your frying pan in the stove. Turn heat to 350-400 deg F or high. When frying pan is hot,add oil for frying.
- Dip 1 sliced tomato in the beaten egg, then dredge in the flour mixture then back to the egg mixture, then slide into the hot oil. Turn tomato after 2-3 minutes on each side or until brownish. Remove and drain in paper towels.
- Repeat until all the green tomato slices are fried.
- Prepare your remoulade sauce.
- 1 serving= 2 fried green tomatoes + 1oz remoulade sauce
Remoulade sauce
1 C mayonnaise
2Tbsp mustard
2Tbsp horseradish sauce
1 tsp lemon juice
1tsp salt
¼ tsp cayenne pepper
Put all the ingredients in a bowl. Mix well to blend. Chill.
Serve 4
