Pancit Canton
Pancit canton is a Pilipino noodle dish. The ingredients calls for egg noodles.In the Philippines
this noodle dish is sold everywhere, by the street hawkers, in wet markets, grocery stores and carinderia. This store bought noodles are cooked,dry and crisp just like ramen but yellowish in color. Sauteed cabbages, carrots, sliced green,yellow and red pepper, diced pork, soy sauce, oyster sauce and sugar is all you need to create this dish.
The ingredients
1 lb pkg canton noodles
1 tbsp vegetable oil
1lb diced raw pork tenderloin
1 tbsp minced garlic
1 C sliced onion
1 C chopped scallions
1 tbsp oyster sauce
1tsp sugar
1tsp black pepper
4 cup shredded raw green cabbage
2 Cup shredded carrots
1 each green, red,yellow bell pepper,cored,seeded and slice in strips
½ C cilantro, wash,picked for garnish
- Use a wok to cook this dish.Put wok in stove. Turn stove to high heat or 350-400 degF.
- When wok is hot, add the oil. When oil is hot, add the diced pork. Saute until fat is rendered or the pork becomes brownish, at this point, remove pork from from wok .Put aside in a dish.
- Add the minced garlic to the hot oil and saute until fragrant, then add the sliced onion and saute until transluscent.
- Add the oyster sauce, soy sauce , sugar and black pepper. Mix well. Add the cooked pork. Mix well.Add the egg noodles and toss using 2 ladles to blend the mixture well.
- Combine the shredded cabbage,bell peppers and carrots in a bowl and blanch with boiling water for 1 minute. Drain.
- Add the blanched shredded cabbage,carrots and sliced green bell pepper to the noodle in the wok . Toss and stir fry until the mixture is hot about 3 minutes.
- Serve hot.
